Luis Alberto founded the Beneficio Las Segovias processing plant in 2004 with the aim of consistently showcasing the region's characteristics in the world of specialty coffees. His farms – Finca La Bendición, Un Regalo de Diós, Lo Prometido, and La Esperanza – are located between 1000 and 1700 meters above sea level in the vicinity of Jalapa and Mozonte. The diverse microclimate, along with the clay and sandy soil, provides ideal conditions for the Pacamara variety, which displays a particularly rich yet refined character in this environment.

It is in this terroir that the Pacamara coffee is born, immediately drawing attention with its size, body, and balanced sweetness. Pacamara is a "big-bean" Arabica variant created from the crossbreeding of Pacas x Maragogipe, characterized by a genetically more intense and complex flavor profile. Behind Pacamara Gigante stands Luis Alberto Balladárez Moncada, a fourth-generation coffee grower in his family, who grew into the profession at a young age – and today, the fifth generation is also actively involved in daily work. About the region

In the world of Nicaraguan coffee, there are regions that quietly and consistently build their reputation – and Nueva Segovia is precisely one of them. This mountainous area in the northern part of the country, along the Honduran border, has become one of the most exciting Nicaraguan origins for specialty coffee in recent years. The combination of high altitude, cooler nights, sunny days, and varied soil structure creates an ideal environment for complex, clean-flavored Arabica coffees.
