Once again, we've snuck a truly special item into Röast's offerings – this time from Mexico, which in itself is a rarity for us. Mexican specialty coffees are less often in the spotlight, yet they can present a surprisingly exciting, exotic flavor profile. Our new item is exactly like this: characterful, clean, and stands out a bit from the usual Central American profiles.
Mexico's coffee cultivation primarily concentrates on the country's southern, mountainous regions, where high altitudes, volcanic and clay soils, and diverse microclimates create an ideal environment for Arabica varieties. A significant portion of production is still tied to smallholder farmers and cooperatives, where traditional methods and a modern quality approach increasingly meet. The result is typically a clean, fruity, balanced acidity coffee that is not boisterous yet memorable.

About the region
The coffee beans originate from the settlements of Siltepec, Santiago El Pinar, Exchuc, and Chenalhó, from an altitude of 1500 meters above sea level. Alma de Chiapas brings together a total of 764 small-scale producers, 119 of whom are female farmers working in ten smaller work groups. The cooperative provides them with access to financing, agricultural training, and support for their children's education; all of which ensures sustainable development in the region in the long term.

The above recipe is only a recommended preparation method; feel free to change it and experiment with settings to suit your equipment and taste. However, it is important to always use filtered water when brewing coffee!
