The History of Coffee
Mustefa Abakeno is a dedicated smallholder farmer in West Ethiopia, in the renowned Jimma zone. The coffees grown on his impressive 18-hectare farm, situated at an altitude of over 2000 meters, faithfully reflect the region's rich coffee heritage. Mustefa cultivates the high-quality 74110 and 74112 varieties, crossbred by the local Jimma Research Center, with the utmost expertise.
Flavor Profile and Character
Thanks to careful washed processing and the high-altitude microclimate, the cup is exceptionally clean, elegant, and layered. The fruitiness of ripe, juicy apricot is accompanied by the creamy sweetness of toffee, while the sophisticated, floral-tea freshness of green tea in the finish completes the experience.
Processing Method (Washed)

Soaking & Selection: Harvested cherries are immersed in water for selection, removing immature or floating beans.

Pulping: The fruit pulp is removed using Mustefa's three-disk pulper. Fermentation: The coffee beans ferment for 8–12 hours under controlled conditions in tanks.

Washing and Cleaning: The beans are washed in water channels, separating any defective batches.

Shaded Pre-drying (Skin drying): While still wet (~50% moisture content), the coffee is hand-sorted to remove the smallest defects.
- African Bed Drying: Dries on raised drying beds for 7–10 days, where it is shaded with netting from the strong midday sun (between 11:00 AM and 2:00 PM).
